What is Ramen Jiro?
“Ramen Jiro” is the name of a ramen restaurant in Japan.
It is a famous and popular ramen restaurant that most Japanese people know. There is also a group of enthusiastic fans known as “Jirolians.
It was founded in 1968 in Meguro, Tokyo. Later, when it moved to Mita, where Keio University is located, it became popular mainly among the students of the university.
Today, disciples who are allowed to operate under the same restaurant name are opening “Ramen Jiro” restaurants in various locations.
As of 2022, the cities with Ramen Jiro are Sapporo, Sendai, Aizu, Niigata, Ibaraki, Tochigi, Gunma, Chiba, Tokyo, Saitama, Kanagawa, and Kyoto.

Characteristics of Ramen Jiro’s Ramen
The soup is a thick, rich pork bone broth. The noodles are very thick and flat.
The soup and noodles are hidden from view by a mountain of boiled “vegetables (bean sprouts and cabbage)” and “buta (chashu pork).
It has a great impact both in appearance and taste. Once you try it, you will never forget it. After a while, you will remember the taste. It is a ramen with a mysterious magic that makes you want to revisit and eat it again without any hesitation.
How to Order at Ramen Jiro
First, decide on the menu and purchase a meal ticket. There is a vending machine for meal tickets in the Ramen Jiro store.
There are basically two types of ramen on the menu: “Ramen” and “Ramen with Buta“. *These two are the standard menu items, although they vary from store to store.
Ramen contains two pieces of “buta (chashu)” and ramen with buta contains five pieces of “buta (chashu)”.
Both are served with a generous portion of vegetables (boiled bean sprouts and cabbage).
Next, decide on the size (quantity).
You must choose between “large” and “small.
Even a “small” ramen has more than twice the amount of noodles as a regular ramen. For first-timers, especially women, “small” is sufficient. *Some restaurants offer a “half noodle” option.
After buying a meal ticket, you sit at your assigned seat.
However, Ramen Jiro is an extremely popular restaurant. Depending on the day of the week and time of day, you will usually have to wait in line for the restaurant to open or for an empty seat.
Ramen Jiro’s Special Rules
Before you take your seat, get a glass of free water. Self-service.
If the waiter asks you, “Do you want garlic?” Please answer “Yes or No”. If you answer “Yes,” you can add more garlic (coarsely chopped garlic) for free.
Other than garlic, vegetables (boiled bean sprouts and cabbage), pork back fat, and soy sauce sauce sauce for soup can be increased free of charge.
If you want to increase, please tell us as follows.
- If you want “more garlic”, say “ninniku mashi”.
- If you want “more vegetables”, say “yasai mashi
- If you want “more pork back fat”, say “abura mashi”.
- If you want a thicker soup, say “Karame-mashi”.
The term “mashi” means “increase the amount of food. This is an expression unique to Ramen Jiro.
“Mashimashi” means double the amount.
On the other hand, if you wish to reduce the weight, please inform us as follows. However, the price will not change even if the weight is reduced.
- If you want “less garlic”, say “ninniku sukuname”
- If you want “less vegetables”, say “yasai sukuname”.
- If you want “less pork back fat”, say “abura sukuname”.
- If you want the soup to be less flavorful, say “karame sukuname”.
Then, when the ramen you ordered is served, eat it promptly.
Concentrate on eating, and do not engage in conversation.
When you have finished eating, be sure to put the bowl and cup you used away on the counter, wipe the table top by yourself, say “Gochisosama” and leave the restaurant.
Sitting and chatting for long periods of time is strictly prohibited.
